Tomorrow is Mother’s day here in the UK and by far the two most popular gifts people give are flowers and chocolate. Now you’ll probably be thinking ‘but that’s so boring, my mum deserves better than that’! And ofcourse you’d be right. So let me introduce you to the latest object of my affection;
This year, imagine giving her flowers, chocolate and also cake, in one pretty package…
Triple chocolate, light as air, fluffy as a cloud, cake with lots of melty fudgy gooey bits hidden inside.
The recipe is from the BBC Good Food website but with added chocolate and almond (because more is more and there’s a reason chocolate is so popular on Mother’s day)! Here’s how its done:
Ingredients
175g softened butter
175g golden caster sugar
3 eggs
85g ground almonds
140g self raising flour
1/2 tsp baking powder
4 tbsp cocoa
2 capfuls of almond extract
100ml milk
50g milk chocolate chunks plus extra for decoration
50g white chocolate chunks plus extra for decoration
Preheat your oven to 160°C. In a large bowl, cream together the butter and sugar till pale and golden. Crack in the eggs and ground almonds and whisk till combined.
Sieve in your flour, baking powder and cocoa followed by the milk and almond extract (you could also use vanilla – yum), then keep on whisking till there’s not a single lump in sight.
Now straight in with the chocolate chunks – the bigger the better in my opinion, that way you’ll get huge pools of melty goodness in between soft mouthfuls of cake. Be sure to keep some aside for decoration later.
Butter your cake tin and pour in the batter, making sure the chocolate is evenly dispersed, then pop into the oven for 50 mins (or till a skewer stuck in the middle comes out clean).
Once the cake is out, let it cool slightly while you melt your extra chocolate which you can then pour, drizzle and Jackson Pollock until you’ve decorated to your heart’s content. Finish with fresh flowers and you’ve got yourself a bloody masterpiece.
Chewy and fudgy at the top, soft in the middle, with a hint of almond and molten chocolate rivers running through.
Guaranteed favourite child for the day.
